VAN METER JAMES BEEF TARTARE

INGREDIENTS

14 oz beef filet, chilled
6 gherkins pickle, finely chopped
1 tbsp capers, rinsed and finely chopped
1 tbsp finely chopped flat-leaf-parsely
2 shallots, finely chopped
1 tsp dijon mustard
Tabasco sauce, to taste
1 tsp Worcestershire sauce
Vmj seasoning
1 EGG

METHOD

Finely trim off the exterior of the beef, cut into thin strips across the grain using a very sharp knife. Dice beef into small pieces and place in a bowl. Add the pickles, capers, mustard, shallots, tabasco and Worcestershire to the bowl. Season the mix and mix gently with a fork. Add in the egg and taste to adjust the mixture if needed. Once finished serve on a plate with sour dough bread, fries or your favorite chips.
